Crazy Simple Homemade Almond Milk

Homemade almond milk – we’re hooked! We’ve got a bowl of almonds soaking constantly. We’ve also been experimenting with different flavors and nut varieties (which we’ll share below). Whether you’re deterred from the store bought stuff due to price or questionable additives/stabilizers, or you’re simply looking to be a DIY rock star, we invite you to try this simple and cost effective recipe. Oh, and because being wasteful is not our jam, we’ve also included tips for what to do with the pulp!

First, let’s check out the recipe:

1 cup raw almonds
6-8 cups filtered water
1-2 pitted dates (optional)
Dash of sea salt
Dash of cinnamon (optional)
1 vanilla bean (optional)Soak almonds overnight in 3-4 cups filtered water with a dash of sea salt.

Rinse and drain the almonds in mesh sieve and add to food processor.

Add 3-4 cups of filtered water, 1-2 pitted dates, dash of cinnamon and vanilla bean.

Pulse on high until well blended.

Pour the mixture through a mesh sieve into a large bowl. Shake and let drain as much liquid as possible. You can also use a cheese cloth!

Side note: the pulp can be used for a variety of things, including “oat-less oatmeal/porridge”. More on that below!

Transfer the liquid from the bowl into a glass jug and enjoy!

Keeps in the fridge approximately 4-5 days.

We’re going to rest out the macaroons FOR SURE!

So what else can you add to your almond milk to make it ‘pop’? On a whim, we experimented with pecans to create a pecan/almond hybrid – one word: YES! It tasted creamy and buttery and was just hands down awesome. You could do 1/2 cup pecans and 1/2 cup almonds soaked, or double the recipe and do 1 cup almonds and 1 cup pecans.

Also, please note that when we double the recipe we still use just 3-4 cups of filtered water to soak the nuts, plus 3-4 cups to blend in the Vitamix once soaked and it turns out just fine.

    Ditto to the previous comments. I definitely thought home-made Almond Milk was going to be more difficult to make but this seems so simple!
