Thursday Recipe Inspiration!

Today we’re sharing three simple, nutritious and tasty recipes to inspire your palate. They all involve minimal prep, introduce new flavor profiles and pack a 1-2 punch in the nutrient department. Try them and let us know what you think!

Sir Kensington Tuna Salad
3-4 TBSP Sir Kensington brand “Special Sauce”
3 TBSP dill relish
3 TBSP chopped jalapenos
3 cans Wild Planet tuna
1/4 cup raw sunflower seeds

1. Open and drain the tuna cans. Transfer all three tuna cans into a large bowl and chop into a finer texture.

2. Add the additional ingredients and mix together.

3. Enjoy alone or with some delicious plantain chips!

Almond Sunflower Berry Cobbler
1.5 cups almond meal/flour
1 cup ground sunflower seed kernels
1 large egg
2-3 TBSP cinnamon
1 TBSP coconut oil (optional)
1 bag frozen mixed berries
5-10 liquid Stevia drops

1. Pre-heat oven to 375 degrees.

1. Place the frozen berries on the bottom of a 9×13 Pyrex.

2. Mix the other ingredients together in a separate bowl.

3. Crumble the mixture and spread out over the frozen berries. Omitting the coconut oil will make it less oily and more “crumbly”.

4. Bake for 35-40 minutes (until it’s as crunchy as you’d like it to be) and enjoy with coconut or almond milk poured over top and maybe a small drizzle of raw local honey.

Green Avocado Smoothie
¼ avocado
10 ounces of coconut milk
Scoop of protein powder
Dash of cinnamon
Pinch of nutmeg
TSP of coconut oil
Ice

Blend all ingredients and enjoy!
