Berry Peach Cobbler and Sweet Potato Mash!

Today we are thankful for the family and friends we are blessed to know, our business and the ability to inspire people around the world, our health and … drum roll please … a really really delicious sweet potato/yam mash and a remix of a berry cobbler that’s downright delectable.

Because one of us has celiac, the both of us naturally follow a gluten free diet at home. Paired with a low sugar diet, we enjoy spending time preparing lower sugar/gluten free alternatives to conventional favorites. Having certain diet limitations, medical or otherwise, doesn’t mean your food has to taste like cardboard and leave you uninspired in the kitchen.

Sweet Potato Mash
*Please note: we actually used yams (hence the orange color) which are often mistaken for sweet potatoes. We prefer yams over sweet potatoes.

6 yams
1 1/2 cups grass fed butter
2 TBSP Xylitol
5 drops liquid Stevia
Generous sprinkling of cinnamon
1/4 TSP ground nutmeg
Freshly ground sea salt

1. Place the yams in a large pot and boil until soft (about 30 minutes).
2. Remove the skin and place the tender yams in a large bowl.
3. Using a beater, whip in the additional ingredients.
4. Season to taste with sea salt.

Inspired Wellness Berry Peach Cobbler
1 cup salted and roasted sunflower seeds
1 cup raw cashews
1 cup almond meal/flour (does not need to be blanched)
1 large egg
1 TBSP or more of cinnamon (we love its natural sweetness and don’t use it sparingly)
1/4 cup Xylitol
10 drops organic liquid stevia
1 bag frozen berry mixture
1 bag frozen peaches

1. Preheat your oven to 375 degrees fahrenheit and lay the frozen berries and peaches on the bottom of a 9×13 inch glass Pyrex and set aside.
2. Grind the sunflower seeds and cashews in a food processor until they are a flour texture.
3. Add to a large mixing bowl with the almond meal/flour and stir together.
3. Add the egg, cinnamon, xylitol and stevia.
4. Mix it all together in the bowl. The goal is to have a “crumbly” mixture. Some stickiness is normal.
5. “Crumble” the cobbler over the frozen berries until it’s covering most of the dish.
6. Place in the oven for 35-40 minutes until it is fairly crunchy.
7. Let cool for a bit and enjoy!

This is one of those recipes everyone asks for when we attend a social event. We’ve perfected it each time and hope you enjoy it!

    Hiya, I was looking through old blog posts looking to see if you had any diet friendly thanksgiving recipes (found this gem of a post) and I wanted to pose some food for thought. I saw that you said you used yam instead of sweet potato, hence the orange color – I got curious so I did some research (see here: https://www.epicurious.com/ingredients/whats-the-difference-between-sweet-potatoes-and-yams-article). Turns out, I think you may still be using sweet potato. From most of the articles I’ve read, yams have pale or purplish flesh but never orange flesh. And yams are typically only found at international markets. Thought to mention this. I’ll be trying the recipe using the orange colored sweet potato mainly because I LOVE sweet potato.
